Arizona Wedding Vendor Spotlight: Fresh From the Kitchen

I want Noelle Salinas to feed me. Like every day. Breakfast, lunch, dinner, sugar (yep, sugar is a meal). But, she’s too busy to dote on my every whim- she’s making culinary yuminess in her kitchen at Fresh From the Kitchen and catering weddings for couples getting married in Arizona! So what is it about this Elite Circle caterer that I love and that you must know?

First and foremost, Fresh From the Kitchen is experienced. Noelle Salinas, the culinary trained sole owner of the company, has operated Fresh From the Kitchen for over 7 years (but of course she’s been sharing her love of food with people since she was young). You’ll also notice that Noelle’s food is approachable. She makes food you’ve eaten, or have at least heard of, then adds her own expert touch, super-fresh ingredients, and beautifully tempting presentation.

What makes Fresh From the Kitchen a great choice for weddings? Fresh from the Kitchen’s business is about 80% weddings…What this means for our clients is catering weddings is like second nature. Can couples customize their menus? Most of our menus are custom for our couples. What is your background in catering and what’s your specialty? For seven years I have been the owner and head chef of Fresh from the Kitchen, but even prior to that my first job was a banquet wedding server. I also free-lanced with other catering companies during college. This really allowed me to see the business ins and outs and work in the business before making it my career choice too. It is my passion and love! My specialty is custom creations. I like challenging myself and creating new flavors. My kitchen does not operate with a lot of recipes. This is a unique feature to my company, and perhaps my company alone. I feel when you cook with your senses, and you love what you do, having a standardized recipe creates standardized food. Thus, why use a recipe when I know how to cook the item by touch and taste? At Fresh from the Kitchen, cooking is from the heart not from a piece of paper. Each dish is delicious for this reason.

What do you see couples doing with their menus that you are really loving right now? Couples want unique stations and family style meals. It is all about not having boring wedding food, but unique and delicious food. They want wines and spirits, family recipes, and other cultures reflected in the dishes that they serve their guest. I love this trend! It allows for a lot of creativity and unique experiences for my clients.

If you could plan your dream wedding menu, what would it be? I loved themed events. I have a desire to a Great Gatsby themed event or wedding because of the opulence! So, the dream menu for such an event would consist of live stations for cocktail hour, and plated service for dinner. Dessert would of course be a lavish dessert table with petite French pastries, wedding cakes of several different sizes, and hand crafted truffles. Additionally, items like truffle oil, lobster, champagne, and the like, would be a huge component of the meal too. I love fancy events and over the top creations, so I have yet to do a Great Gatsby theme, and can not wait until I do!
